"La Mian" means "hand made or hand-pulled noodles." These noodles originated from the north-western part of China. "Dao Siao Mian" means hand-cut or hand shaved noodles. These noodles originated from the province of Shanxi. Pieces of noodles are shaved directly from the dough into a pot of hot water. These noodles are more chewy in texture when compared to the lamian or hand-pulled noodles.
